The courgettes that were supposed to be the easiest vegetable anyone could grow produced three fruits in June and then stalled through the hottest months. The peas never really established themselves in the way the books described.

It took me a while to understand that the problem was not my technique but my reference points. Most widely available vegetable growing advice is calibrated for cool, wet, northern European conditions, and vegetables described as easy in that context are often genuinely difficult in hot, dry Mediterranean and North African climates, while vegetables that thrive with minimal intervention in heat and drought barely feature in standard beginner recommendations at all. Knowing which crops belong in which category changes everything about how a hot-climate kitchen garden works.

Why Cool-Climate Easy Crops Struggle in Heat

The crops that appear most consistently on beginner vegetable lists in UK and European growing guides, lettuce, spinach, peas, courgettes, and brassicas, are predominantly cool-season crops that evolved in or were selected for mild, moist growing conditions. They have a narrow temperature comfort zone. Lettuces bolt, which means they skip the edible leaf-producing stage and go directly to flowering and seed production, when temperatures consistently exceed about twenty degrees at night and twenty-five to thirty during the day. In a British summer, this sometimes happens. In a Mediterranean or North African summer, it happens reliably, quickly, and repeatedly, making lettuce a crop that is either grown in winter or spring before the heat arrives or not grown successfully at all without shade, irrigation, and careful variety selection.

Spinach is even more heat-sensitive, bolting at temperatures that are simply average summer conditions in warmer climates. Peas fix atmospheric nitrogen through their roots but are fundamentally a cool-season crop that struggles to set pods when temperatures rise and that produces nothing at all during a hot summer regardless of care. Once you know what to look for, the difference in how these crops perform in heat compared to their cool-climate equivalents is dramatic.

Tomatoes are the most universal success story across climates, but in hot conditions, early varieties developed for short cool seasons are often less productive than mid-season and late varieties that are designed for long, hot growing periods and that produce heavily from midsummer through autumn. Cherry tomato varieties, in particular produce prolifically in heat and with less water than large-fruited varieties, and they're genuinely forgiving of the occasional missed watering in a way that large beefsteak types are not.

Aubergines are one of the most underrated beginner crops for hot climates. They are heat-loving in a way that few other European vegetables are, genuinely thriving rather than merely surviving in temperatures that stress most cool-season crops, and they produce abundantly through summer months with reasonable irrigation. A single well-established aubergine plant produces more fruit than most households can use in a season. They're slow from seed and benefit from starting early indoors, but once established in warm conditions, they are among the most productive and least demanding crops available.

Peppers and chillies perform similarly to aubergines, genuinely preferring high temperatures and low humidity, and producing continuously through a long, warm season. Both sweet and hot varieties are well suited to container growing, which makes them accessible even without a garden bed. Getting the container size right matters significantly for peppers, but in appropriate conditions, they produce throughout summer and often into autumn.

Climbing beans and runner beans are significantly more productive in warmth than peas, and the key difference is that beans are genuinely warm-season crops that set pods reliably in heat while peas struggle. A trellis of climbing beans in a sunny position produces continuously from early summer until the first significant temperature drop in autumn, requiring only consistent watering and regular harvesting to maintain productivity. The harvest from a few metres of climbing bean trellis is substantial, which makes them excellent value for the space they occupy.

Courgettes and squash are worth including with a specific note: while standard courgette varieties slow in extreme heat, heat-adapted Mediterranean varieties exist and perform significantly better in hot, dry conditions than the standard British market varieties that appear in most seed catalogues. Varieties selected for hot climates set fruit more reliably, are more drought-tolerant, and produce through summer months when northern European varieties stall. Finding these varieties may require specialist suppliers rather than standard garden centre stock, but the difference in performance is significant enough to be worth the additional effort of sourcing them.

Heat-Season Salad Crops That Actually Work

Giving up on salad crops entirely in a hot climate is not necessary, but it requires choosing the right ones. Standard lettuce fails in summer heat, but several alternatives produce usable salad leaves through warm months with far less bolting. Purslane, which grows almost as a weed in Mediterranean climates, produces fleshy, mild leaves that are used in salads throughout the Middle East and Mediterranean, and requires almost no attention once established. Swiss chard tolerates heat considerably better than spinach and produces large, usable leaves through summer, cropping continuously when harvested at the outer leaves. Rocket bolts in heat but does so more slowly than lettuce and retains some usable leaves through the process. New Zealand spinach is completely different botanically from standard spinach but produces similar leaves that genuinely thrive in heat and drought, producing continuously through the hottest months when standard spinach has long since finished.

Winter is also a growing season in Mediterranean and North African climates; in a way, it genuinely is not in northern Europe. The cool-season crops that struggle in summer, lettuces, peas, spinach, broad beans, and brassicas, all grow well through the mild winters of these climates and produce harvests that northern European growers cannot achieve in their own cold winters. The timing of sowing matters enormously, and in a hot climate, the calendar is simply shifted: winter and early spring are the seasons for cool-loving crops, while summer is for heat-loving crops, which is the reverse of what most standard guides describe.

The lettuces and peas that kept disappointing me were not failures of my technique. They were crops that the standard easy-to-grow category describes for conditions I was not growing in.
